Our story begins with two chefs, one young and innovative and the other older with experience and maturity, coming together through the nostalgia of Latin American cuisine to create dishes full of passion, flavour, freshness, and a lot of heart. Together they aim to bring their knowledge and deep bond with Latin culture to Sydney, Australia.
Germán

With over 30 years of experience in restaurants across Latin America and Australia, Germán is the mastermind behind our authentic flavour and passion. He has extensive experience across multiple cultural cuisines and dining experiences that have helped him develop the rich and fresh flavours we bring each day to Guacamole.
Diego

Gastronomer, tireless traveler, and business strategiest, Diego combines his experience in global hospitality with a vibrant passion for Latin American cuisine. He leads the vision of Guacamole as a cultural bridge, where each bite connects people with the roots, history, and warmth of our land.
